It’s not often that we find key limes here in Manila. So when I found myself with a big bag of this citrus fruit, I juiced them, froze them, and saved them for this recipe.
I was a little concerned about serving it frozen and thought it would be too hard to eat. Novice pie maker mistake. Being a custard based pie, it replicates the texture of ice cream – smooth and velvety. I can almost imagine Nigella Lawson saying that after taking a big bite of this deliciously tart pie.
Seriously addicting.
I love key lime pie. :-) I will have to try this.
this was a very simple recipe to make. the hardest part was the crust :)
