Garam Masala Chicken With Tomato Cauliflower Curry

Sunday dinner was inspired by this recipe that I found online. The garam masala powder was a big hit and we devoured this within minutes.  Unfortunately, the photo will not do this delicious meal any justice.

I left my DSLR at work and I had no choice but to use my six year old Canon IXUS70. Looking at this picture, I realize that it’s probably time to buy a new point and shoot camera. I want one of these.

 I was also thinking of making a light box for my food photos. Our apartment is poorly lit and I am getting quite tired of the fluorescent light in the kitchen. So until I can get my new camera, this will have to do and will hopefully help with improving my food photos.


Tomato Cauliflower Curry Sauce

  • 1 tablespoon, minced ginger
  • 2 green chillies
  • 3 garlic cloves
  • 1 medium onion
  • 1 tablespoon gram masala
  • 1 tablespoon cumin
  • 1 tablespoon curry powder
  • 1 14 oz. can of diced tomatoes
  • 1/4 cup coconut milk
  • 1 small cauliflower head
Combine all ingredients, except for cauliflower, in a food processor and mince. In a hot pan, add 2 tablespoons of oil. Saute’ mixture in pan for 5 minutes. Add diced tomatoes and simmer for 25 minutes. Add the coconut milk and the entire cauliflower and simmer for another 10 minutes. Once the cauliflower is cooked, roughly chop it in the pan and serve with chicken or fish.
