Say goodbye to your old potato salad.

French potato salad
- 1 kilo baby potatoes, halved and boiled
- 3 tbsp chives, minced
- 3 tbsp dill, minced
- 1/4 cup parsley, minced
- juice and zest of 1 lemon
- 1/4 cup olive oil
- 1 tbsp Dijon mustard
- 1 tbsp horseradish
- 1 tbsp honey
- 3 tbsp white wine vinegar
- 1/4 cup capers, roughly chopped
- 2 tbsp good white wine
- 2 tbsp butter
- salt and pepper to taste
Mix all the liquid ingredients, mustard and horseradish in a jar and shake vigorously to create the vinaigrette.
In a separate bowl, mix all the herbs and lemon zest together.
Once the potatoes are cooked, quickly add in the white wine and butter. Add the vinaigrette and mix thoroughly. Add the rest of the herbs and capers. Don’t forget to add the salt and pepper.
*The trick to this potato salad is to dress the potatoes when they’re hot, so make sure to prepare the vinaigrette ahead of time.
